Penne With Chicken and Roasted Vegetables

The last recipe from the Utah trip belongs to my sister Tonette and her better half Jerry. They made a fabulous pasta with roasted vegetables and grilled chicken.  Think of a primavera pasta with chicken.  It was really good!

Here are the ingredients:

3 boneless chicken thighs
4 links Italian sausage
1 small bundle of asparagus
1 small head of broccoli
1 onion
1 tomato
1/2 pound mushrooms
1/2 bag frozen peas
1/2 bag fresh spinach
1 bottle of Italian salad dressing
2 pounds penne pasta
1 cup olive oil
1/2 bulb garlic, peeled and minced
2 cups white wine
3 cups chicken stock
1 1/2 stick butter
1 teaspoon each - fresh oregano, basil, parsley
Salt and pepper

Marinate the chicken in 1/2 bottle of salad dressing, salt and pepper.  Let that marinate for 2 hours.  Grill the chicken and sausage until mostly done.  Set aside.


Drizzle 1/4 cup olive oil on asparagus.  Sprinkle with salt and pepper.  Roast in 350 degree oven.

Cut the broccoli, onion, tomato and mushrooms.  Place in an oven proof pan.  Sprinkle with salt, pepper and 1 cup salad dressing.  Roast the vegetables for 15 minutes.

Cook the penne al dente - still a slight crunch.  The pasta will finish cooking in the oven.  Right before you are ready to drain the pasta, add the peas and spinach.  Drain and add to an oven proof pan.  Pour the chicken, sausage, and roasted vegetables in the pasta.


Saute the garlic with 3/4 cup olive oil.  Add wine and chicken stock.  Add fresh herbs, salt and pepper.  Melt the butter and incorporate that into the sauce.  Pour sauce on top of pasta.

Cover with foil and bake for 15 minutes.

Greek Pasta Salad

Easy.  Quick.  Delicious.  Three simple words for the excellent side dish.  The recipe is easy to put together and I promise, this will be a side dish everyone will love.

Here are the ingredients:

1/2 box rotini noodles
1 can petite diced tomatoes, drained
1 cup kalamata olives, pitted and chopped
1 cup feta cheese, crumbled
2 green onions, chopped
1/2 cup Greek or Italian vinaigrette salad dressing
Salt
Pepper
Fresh Parsley

Simply cook the noodles and throw the rest of the ingredients in a bowl.  Mix together and refrigerate to let the flavors infuse the pasta.

Pasta With Sausage In a Tomato Cream Sauce

The other night I was thinking about something different to make for dinner.  Does anyone every get into a rut?  Well, I was feeling that way.  I was in the mood for pasta but wanted something a little different than usual.  My sister Tonette mentioned that she has been making pasta with sausage so I thought I would give it a try.

Here are the ingredients:

1 pound pasta (I used Farfalle)
1 pound ground Italian sausage
1 pound sliced mushrooms
1 can diced tomatoes
1 can tomato sauce
2 cups heavy cream
1 teaspoon salt
1 teaspoon pepper
1 teaspoon parsley
1 teaspoon basil
2 cloves garlic, minced
1 shallot, minced
1/4 cup olive oil
2 Tablespoons butter

I began by browning the sausage in a saute pan.  Set aside when brown.  Add the olive oil and butter to the saute pan.  Saute the garlic and shallots for 1-2 minutes making sure they don't burn.  Add the mushrooms.  When the mushrooms are brown, add the salt, pepper, basil and parsley.

Add the can tomatoes and sausage and let simmer for 5 minutes.
 Add the can of tomato sauce and simmer for another 5 minutes.  Add the heavy cream and simmer for another 5 minutes.   Combine sauce with al dente pasta and toss to coat.

Lemon Shrimp Pasta

Tonight I was fortunate to have dinner with my niece Sierra and my mother.  Going to mom's is always a food adventure.  Mom is a great cook and I always learn so much from her.  Tonight she made this great shrimp pasta.  It was light and lemony!

Here are the ingredients:  

1/3 cup olive oil
2 garlic cloves, crushed and put into the olive oil
3 tablespoons minced onions
1 tablespoon sugar
Salt
Pepper
1/4 cup fresh lemon juice
10-12 shrimp, peeled and deveined
1 pound cooked pasta
1/4 cup chopped parsley (fresh)

Put the crushed garlic cloves into the olive oil.  Let that infuse a few hours.  Saute the onion with a little of the olive oil.  Add the rest of the oil, sugar, salt and pepper to taste, lemon juice and shrimp.  Let that simmer 5-7 minutes or until the shrimp turns slightly pink.  


Add the parsley and cooked pasta.  Serve.




Note:  Mom says she enjoys this pasta with a jar of marinated artichoke hearts and some feta cheese.

Linguini Con Pesce - Seafood Pasta

The family gathered at Cunetto's after my father passed away.  One last tribute to a great man!

 Italians love their pasta.  One of my all time favorites is con pesce or seafood pasta.  When I was growing up, my family would go to Cunetto's House of Pasta (St. Louis, Mo) on special occasions.  I love their linguine con pesce.


My Nonna's maiden name was Cunetto.  She came over from Sicily, in the early 1900's.  Her nephews, Vince and Jake, started this iconic restaurant on "The Hill."  The Hill is the place where Italians live in St. Louis, it's own Little Italy, full of history and Italian culture.  It is still one of my favorite places to visit.

I wanted to make a great seafood pasta in a cream sauce.  Here are the ingredients:

1 pound linguine
3 cups heavy cream
4 tablespoons butter
3 tablespoons olive oil
2 cups Parmesan cheese
1 small can of chopped clams
1 pound of crab meat (not canned)
8-10 shrimp, peeled and deveined
2 cloves garlic, minced
1 pound mushrooms, sliced
1 small onion, diced
1/4 cup fresh parsley, chopped
Salt
Pepper

Fill a large pot with water and put 2-3 teaspoons salt.  Boil and cook pasta, al dente.  This means that the pasta is not yet soft-still has a little bite to it.  It will finish cooking in the sauce.

In a large saute pan, heat the butter and olive oil.  Saute the onions until translucent.  Add the mushrooms and garlic.  Let that saute for 3-5 minutes.  Add 1 teaspoon salt and pepper.


Add the heavy cream.  Let that heat up until just near the boiling point.  Add the clams, crab and shrimp.  Stir, and add the Parmesan cheese and parsley.  The sauce will thicken as it cooks-about 5 minutes.


Add the al dente pasta - stir for 3-5 minutes.  Serve.

Lasagna

One of my favorite pasta dishes is LASAGNA!  It has a tangy, chewy, goodness that can't be surpassed.  I love plating the lasagna and watching the cheese stretch over to the plate.  That is yummy goodness!

This recipe comes from my mom.  Mom is a great cook and I am so blessed to have her in my life.  She is a strong woman and has raised her girls to be strong and able to withstand anything.  With my father's passing, my mom handled herself with dignity and grace.  I can only hope to be that strong in life.

Here are the ingredients for the lasagna:
Marinara Sauce
Cottage Cheese - Large Container
Ricotta Cheese - 2 large containers
Parmesan Cheese - 2 cups
4 eggs
Salt
Pepper
Parsley - 3 tablespoons
Ground Beef /Ground Sausage - 1 pound each
Lasagna Noodles
Mozzarella Cheese - shredded
Start with a basic tomato sauce.  Here is a link to my meat sauce recipe.  Use that but omit the meat.

Next, brown your meat.  I like to use a combination of ground beef and ground Italian sausage.  When the meat is brown, drain the fat.

In the meantime, assemble the cheese mixture.  Mix together in large bowl:  Cottage cheese, ricotta cheese, Parmesan cheese, eggs, salt, pepper, and parsley. 



OK - time for you to make a decision.  Do you want to take the easy way out?  If you want to take the easy way out, you can buy no boil noodles.  These are great and taste just fine.  If you want thicker noodles which taste better, then start up a large pot of water and boil the noodles to al dente.  Of course if you are REALLY wanting to do it right, go ahead and make your own pasta dough!


Once all of your ingredients are prepared, it is a matter of setting up an assembly line.  Start by putting a little sauce in the bottom of your pan and put a layer of noodles on that.


Then, layer your meat, cheese mixture, and shredded mozzarella.


Then put another layer of noodles on top of that.  Ladle some more sauce and start the process over again.  When you near the top of the pan, put a final layer of noodles and ladle some more sauce on the top.

Cover the lasagna with foil and bake at 350 degrees for 45 minutes.  After 45 minutes, remove the foil and put shredded cheese on the top.  Put it back in the oven until the cheese melts.

Chicken Tetrazzini

This post is dedicated to my Mom...........she is the reason I have such a passion for food.  She taught me to cook, which was fortunate for my father because Mom did a lot of traveling with her job!

 
Mom grew up learning how to cook from her father, who loved to bake, and her grandmother Nellie, who loved cooking Southern food. By marrying into a Sicilian family, she was also fortunate to watch my Nonna and learn some Italian cooking secrets.  To say she is an eclectic cook is putting it mildly!

OK - secretly I'm doing this blog as an excuse to scan in old pictures! 
 
I asked my Dad what was his favorite thing Mom made - his response was not surprising, "PASTA!"  Dad could eat pasta everyday.  My favorite pasta dish that Mom made when I was growing up was Chicken Tetrazzini.  Here are the ingredients:
 
8 oz spaghetti
1 garlic clove, minced
Chopped parsley
1 pound fresh mushrooms
1 bay leaf
1/2 teaspoon salt
1/4 teaspoon pepper
6 tablespoons butter
2 tablespoons flour
1 cup hot chicken broth
1/4 cup dry white wine*
1 cup heavy cream
Diced chicken breast
1/2 cup Parmesan cheese
 
 
To begin, poach the chicken.  This means that you are simmering the chicken in water, with various vegetables and spices.  By doing this you are creating your own chicken stock.  I added onion, garlic, celery, lemon, salt and pepper to the water, along with 2 chicken wings and 1 breast. 
 
 
 
If you are going for fast you can buy a deli chicken and use that meat. 
 
When the chicken is cooked through, take the chicken out of the broth and let it cool.  Strain the broth and keep it hot.  When the chicken is cool, pick the meat off the bone.
 
Heat up a saute pan and put a little olive oil and butter in the pan.  Add the mushrooms and brown them.  Add garlic, bay leaf and parsley. 
 
When the mushrooms are brown, put them in the same bowl as the chicken meat. 
 
In the same saute pan, melt 6 tablespoons of butter.  When that is melted, add the flour and stir.  The butter will thicken, making a roux.  When the flour is incorporated into the butter, slowly add in the wine and hot chicken broth.  Slowly add the cream. 
 
In a sauce pan, cook the pasta in salted boiling water.  Stop cooking the pasta al dente.  This means that it still has a little bite to it - a little chewy.  The pasta will finish cooking in the oven.
 
Put the pasta in a pan.  Pour the chicken and mushrooms on top.  Pour the white sauce on top.  Sprinkle with cheese.
 
 
Bake at 350 degrees for 15 minutes.
 
*My Mom doesn't like cooking with wine.  Instead of wine, she put 1/4 cup milk into the dish.  Also, she added a little shredded cheddar cheese along with the Parmesan cheese.

Homemade Ravioli

Growing up Italian, I savor every form of pasta.  BUT, if I had to pick my all time favorite it would be meat ravioli!  I remember growing up, my Nonna had it at Christmas and my mother would make it as well.  About 10 years ago, my mom showed me how to make it.  I didn't appreciate it at the time, too busy with everything unimportant in my life.  As I've grown older, I appreciate these family traditions more.  And so, with my sister and nieces coming to town, I asked my mother if she would show us (again) how to make ravioli.  I promise mom, that I won't forget this time!

To start, I made a HUGE pot of sauce (http://rediscovermom.blogspot.com/2012/07/meat-sauce.html), omitting the meat. 

To make the ravioli filling, combine 1 pound of ground beef, 1/2 pound ground pork, 1/2 pound ground veal, 1 cup Parmesan cheese, salt, pepper, and 3 tablespoons parsley.  Make into meatballs and put them raw into the sauce.  Allow the meatballs to cook in the sauce for several hours.  This will also flavor the sauce.

Next, it is time to make the pasta dough.  Here are the ingredients:

4 cups flour
6 eggs
1 tablespoon olive oil

We wanted to learn to make dough like the Italians do so my mom told us to put the flour  in a heap right onto the counter.  Whisk the eggs.  Make a well and put most of the egg mixture, along with the olive oil into the center.  Slowly stir the eggs, incorporating the flour.

As you incorporate the flour, it will form into pasta dough.  If it is too crumbly, add the rest of the eggs.  The dough should be a light yellow and be moist but not sticky.

When the dough is finished, put it under a damp towel and leave it to rest for 30 minutes.  Each roll of dough makes about 30 ravioli.

While the dough is resting, time to grind the meat.  The ingredients for the ravioli filling are:

Meatballs
1 can carrots
1 can mushrooms
1 can spinach

My mother had my Nonna's meat grinder.  We assembled it and started running everything through the grinder.

Now it's Julia's turn at the wheel!


When the pasta dough has rested 30 minutes, it's time to roll it out.  Several years ago my mom and dad went to Italy.  When they were there, they bought a pasta roller.  You don't need to go to Italy to buy a pasta roller.  They have them here in the U.S.!  Or, you can do it the old fashioned way and roll it by hand.  That is what my Nonna used to do.


When you roll out pasta dough, set the rollers to 1.  Roll 1/3 of the dough ball through.  After it goes through the rollers, fold it in half and send it through again.  Roll it through he number 1 setting 5-6 times.  Set the pasta roller to the number 2 setting.  Roll it through once.  Set the machine to number 3.  Roll it through once.  Continue all the way to number 5.

The pasta came out in 3-4 foot sections.  We were able to lay it across my island, with the sides hanging off the side! 

Take small balls of meat and place it onto the pasta sheet.  We put two balls across and fill the sheet until half full. 


When you filled the pasta sheet until half full, put your fingers in water and run it along the sides and middle so that when you fold the pasta over it seals.


When you fold the dough over, press in the center first.  This will allow you to dissolve air pockets before sealing around the meat.  Press from the center, around the meat.  Press the edge down after the air pockets are gone.  When the ravioli is sealed, take a pizza cutter or a ravioli cutter and cut individual raviolis. 

We had some extra dough so we used the pasta machine and made fettuccine noodles.  We sat the noodles out overnight to dry.  My dad said that my Nonna would make fresh pasta and drape it over the chairs to dry!



Was this a long afternoon?  YES!  But, it was all worth it!  The meal was great but what I loved most of all is that I was able to spend the afternoon with my mother, my sisters and my niece.  That is really the lost art of our grandmothers!
