I love this dip and you will too! My good friend, Becky, whom I miss and love dearly, brought this to my home this summer. It is super easy to assemble and the flavor is great! Here are the ingredients:
1 can medium shrimp, drained and chopped
1 block of cream cheese
8 oz of Hellman's mayonnaise
2 green onions, diced
Salt
Pepper
Dash of garlic powder
My addition: 1 tablespoon of Sriracha
Blend all of the ingredients together and refrigerate for a few hours. If you want a little more kick, add a little more Sriracha! This is yummy and easy! Thanks Becky for being such a great cook and a better friend! I love you!

Shrimp Fried Rice
We don't eat a lot of Asian food but every once in a while I get an urge to eat some fried rice. Here is an easy, quick recipe that your whole family will love!
Ingredients:
1 cup shredded
1 cup chopped broccoli
1 cup frozen peas
1/2 cup diced onion
1 cup shredded cabbage
1 pound shrimp, peeled and deveined
1 1/2 cup uncooked rice
2 tablespoons sesame oil
4 tablespoons vegetable oil
2 cloves garlic, diced
1/4 cup fish sauce
1/4 cup soy sauce
2 teaspoons sugar
1 tablespoon rice vinegar
It is best to use leftover rice for this dish. If you don't have leftover rice, then just plan ahead and make the rice the day before. Keep the rice in the refrigerator until ready to use.
Cut all of your vegetables so that they are ready to go. This dish comes together very quickly so be ready.
Combine the last 4 ingredients. This will be your sauce.
Heat a large pan or wok. Whisk the eggs together and scramble in the hot pan. Set aside.
Heat the wok back up. Combine 2 tablespoons vegetable oil and 1 tablespoon sesame oil. Add 1 clove garlic and 1 tablespoon onion to the oil. Be careful not to burn the garlic!
Start cooking the carrots first. This is the heartiest vegetable and will need to the longest to cook. Saute the carrots 3-4 minutes before adding the rest of the onion, broccoli and peas. Saute 3 minutes before adding the cabbage and shrimp.
Cook 3-4 minutes and remove from heat. Set the shrimp and vegetables aside.
Heat the wok back up, adding the rest of the vegetable and sesame oil. Add the rest of the garlic to the oil. Add the rice and let the rice toast and soak in the oil before stirring-about 2 minutes.
Stir the rice, adding in the sauce. Let the rice cook 3-5 minutes before adding in the eggs, shrimp and vegetables.

Bang Bang Shrimp
This year I have vowed to be more adventurous with the foods I eat. I find that when I think about meals to make, I make the same things over and over. This year will be different.
Bang bang shrimp..........I fell in love with it when I tried it on the Ruby Tuesday's appetizer menu. I wanted to recreate this fantastic shrimp and added some rice to make it a complete meal.
Here are the ingredients:
1 pound small shrimp - peeled and deveined
1 cup buttermilk
1 cup flour
1/4 cup panko bread crumbs
salt and pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 cup mayonnaise
4-5 teaspoons sriracha
1-2 teaspoons rice wine vinegar
1 teaspoon sugar
Oil
Cilantro for garnish
Soak the shrimp in buttermilk for one hour. Heat oil to 350 degrees. Combine these ingredients: flour, bread crumbs, salt and pepper, onion and garlic powder. When the oil is ready, take the shrimp and drain the buttermilk. Dredge the shrimp in the flour mixture. Fry until golden brown.
While the shrimp are frying, combine the mayonnaise, sriracha, vinegar, and sugar.
When the shrimp are golden brown, take them out of the oil and let them drain on a paper towel. Combine the shrimp and the bang bang sauce. Serve over rice.

Lemon Shrimp Pasta
Tonight I was fortunate to have dinner with my niece Sierra and my mother. Going to mom's is always a food adventure. Mom is a great cook and I always learn so much from her. Tonight she made this great shrimp pasta. It was light and lemony!

Here are the ingredients:
1/3 cup olive oil
2 garlic cloves, crushed and put into the olive oil
3 tablespoons minced onions
1 tablespoon sugar
Salt
Pepper
1/4 cup fresh lemon juice
10-12 shrimp, peeled and deveined
1 pound cooked pasta
1/4 cup chopped parsley (fresh)
Put the crushed garlic cloves into the olive oil. Let that infuse a few hours. Saute the onion with a little of the olive oil. Add the rest of the oil, sugar, salt and pepper to taste, lemon juice and shrimp. Let that simmer 5-7 minutes or until the shrimp turns slightly pink.
Add the parsley and cooked pasta. Serve.
Note: Mom says she enjoys this pasta with a jar of marinated artichoke hearts and some feta cheese.
